The Mediterranean still accounts for 99 percent of all world olive oil production.‎ From ancient times until today, the basic process of producing the oil is the same. First, whole olives are pressed hard into pieces. Then, the liquid is separated from the solids. After that, the valuable oil is ‎ separated from the water.‎ Many olive growers make their ancient traditions continue and still harvest the olives by hand. “We harvest in the traditional way,” says Don Celso, an olive farmer from Tuscany, Italy. “It would be less expensive to do it with machines, but it’s more a social thing. Twenty people come to help with the harvest, and we pay them in oil.”‎ Olive oil has had a variety of uses through its long history. In ancient times, olive oil was used as money and as medicine. It was even used during war—heated up and dropped down on attackers. It is still used in religious ceremonies. It is great for protecting the freshness of fish and cheese. There are even olive oil lamp and olive oil soaps.‎ One important study shows that Mediterranean people have the lowest rate of heart disease among Western nations. This is partly associated with their frequent use of olive oil. Other studies show that food cooked in olive oil is healthier, and that eating olive oil twice a day reduces women’s risk of getting breast cancer. The world is beginning to understand its benefits, and olive oil is no longer an unusual sight at dinner tables outside the Mediterranean area. The olive oil producing countries now sell large amounts of olive oil to countries in Europe, Asia, Africa, and North and South America.‎ Olive oil improves the lives of people everywhere. Over the decades, researchers have put forward several systems through which sleep makes us energetic again, but still don’t fully understand the big picture. Now, two recently published studies come up with an interesting explanation: we sleep to forget some of the things we learn during the day.‎ We store memories in networks in our brains. Whenever we learn something new, we grow new connection between neurons (神经元), called synapses (突触). In 2003, Giulio Tononi and Chiara Girelli, biologists at the University‎ of ‎Wisconsin-Madison, put forward something very interesting: during the day, we learn so much and develop so many synapses that things sometimes get unclear. Since then, the two and their colleagues have made quite a few interesting additions to that study.‎ For starters, they showed that neurons can cut out some synapses, at least in the lab. But they suspected the same things happens every day, naturally, in our brains ---probably during sleep.‎ So they set up a painstaking experiment, in which Luisa de Vivo, an assistant scientist working in their lab, collected 6,920 synapses from mice, both awake and sleeping. Then, they determined the shape and size of all these synapses, learning that the synapses in sleeping mice were 18 percent smaller than in awake ones. That’s quite a big margin.‎ After this, they designed a memory test for mice. They placed the animals in a room where they would get a mild electrical shock if they walked over one particular section of the floor. They injected some of the mice with a material that had been proved to prevent the cutting of new synapses. The mice that experienced this would more likely forget about the section and after a good night’ sleep, they tended to walk over the section again, while mice that slept normally remembered better.‎ Then, Dr. Tononi and his colleagues found that the cutting didn’t strike every neuron. (14)‎ W: That seems to be the case. (14) ‎ M: That's interesting. So, what's your favorite smell?‎ W: Oh, I have a lot of different ones. The smell of the sea reminds me of happy family holidays, (15) and the smell of roses makes me think of my friend's house. Strangely enough, I like the smell of aircraft fuel at airports. I know I'm going to fly somewhere exciting! But it's the general smell of my garden that I really like the most. (16) That means I'm at home where I should be. ‎ Text 10 ‎ Good day, everyone. Now that we’re all on the boat, (17) I'll give you a brief explanation of today's activities, as well as an introduction to the Great Barrier Reef itself. As we leave the mainland here, we're going to pass by one of the most fascinating parts of this reef. The beautiful colored plants that you see below you started forming 8000 years ago. They are home to over 2000 species of fish. Green Island is just one of the 900 islands of the Great Barrier Reef, (18) and it is the only one with a rainforest. (19) Sherri is our park guide, and she will take you through the forest and tell you all about the 120 different plant species we have. If you're interested in getting wet, I suggest you follow Damien and Marcus. They’re our diving guides, and they have the most knowledge about life on the island. (20) Anything to do with beer or boats, you can ask me. However, do not go anywhere on your own without informing us first. We wouldn't want anyone to get bitten by a shark or a poisonous spider.
