In Guilin, the dish is often eaten at bare-bones (极简单的) shops while you sit on tiny stools. Side dishes, such as pickles, are for diners to add as they wish. Soup may also be added. “It’s kind of self-serve,” the owner Mr. Ding said. Here in New York, the polished wood stools are of comfortable height. The room has concrete floors and on the walls are painted characters from the popular martial arts novels of Jin Yong. Soup is delivered to the table as a side. First, people have been saying for more than a century that bike design has reached its limit, except for gradual advances.
