中国菜谱英文翻译大全 为期10天的“中国菜英文名征集活动”日前顺利结束,包括热菜、凉菜、羹汤、主食、甜品在内的数千种菜品、酒水、饮料接受了市民的“审核”。中国菜的翻译问题一时成为各界关注的焦点。 本次征集活动由北京市外办、北京市旅游局、北京市民讲外语活动办公室联合开展。接受审核的英文菜名来自各星级饭店、餐馆菜单,翻译专家对这些菜名进行了审核和分类,并对原有的菜单英文名进行了增补,现已初步完成了《北京市餐饮业菜单英文译法》(讨论稿)的编写工作。 据悉,今年春节前后,综合各界意见修改后的《北京市餐饮业菜单英文译法》将正式出台,届时北京市所有餐饮饭店中的数千种菜品、酒水都将参照这个统一的英文译本。今后,中国菜肴的英文名将有望在全国范围内统一。 古怪翻译五花八门 从本次征集活动的社会反馈来看,豆腐、饺子、宫保鸡丁等中国最传统的食品、菜肴的英文名最具争议。在《北京市餐饮业菜单英文译法》(讨论稿)中,豆腐被译为“beancurd”,饺子译为\n“dumpling”。许多市民认为,既然“jiaozi”“tofu”已被世界广泛接受,为什么不采用? 此外,对于“宫保鸡丁”这一常见菜式,不少市民认为“KungPaoChicken”已被老外们所熟知,可谓家喻户晓,为什么译文舍近求远?(在讨论稿中被译为“SautéedDicedChickenwithPeanutsandChili”) 记者在采访中了解到,近来许多星级酒店、餐馆均推出了英语菜单,有的按照字面意思直译,有的采取音译,有的则根据典故进行解释性翻译。菜名英译缺乏统一标准、译者专业水平有限等多种原因导致了目前英文菜单五花八门,常常让老外们目瞪口呆,不知所云。 加拿大小伙子Brain表示,一次他在一家东北餐馆看到“tigerdish”(老虎菜)的菜名时,吓了一跳,心想“中国人为什么要食用受保护动物——老虎呢?” 类似让外国人摸不着头脑,甚至引起误会的菜名还有很多。例如,有的酒店将“四喜丸子”翻译成“Fourgladmeatballs”(四个高兴的肉团);“宫保鸡丁”译作“Governmentabusechicken”(政府虐待鸡);“烧鸡”译成“Burned Chicken”(烧糊了的鸡);“回锅肉”译作“Twice-cookedPork”(烹了两次的猪肉);“生鱼块”则是“Chopthestrangefish”(砍那陌生的鱼)。最令人匪夷所思地是将“童子鸡”\n翻成“ChickenWithoutSexualLife”(没有性生活的鸡)。 中国烹饪协会相关负责人告诉记者,菜单翻译不同于一般的说明文字,尤其是一些老字号的传统菜,菜名中既包含典故又具有对手工技艺及风味特色的描述。因此,译名不仅需要让外国客人看得懂,看得明白,还要体现中国菜的风味及烹饪技艺。“其实,一份翻译出色的菜单能全面提升老字号餐馆的服务水平。”该负责人说。 菜名英译方法多样 中国饮食文化博大精深,菜系流派争奇斗艳,目前各种版本的菜名译法也各有侧重和特点。 北京大学英语系胡壮麟教授告诉记者:“菜名的英译方法灵活多变。在翻译中最终采用哪种方法,可根据各人习惯和具体情况来确定,可以是突出菜肴的原料,也可以是介绍其烹制方法,或是体现菜肴的味道及其背后的典故等。” 据专家介绍,目前广泛采用的菜名英译法大致分为以下几种。 以主料开头的译法主要介绍菜肴的主料和辅料,例如“Scrambledeggwithtomato”(西红柿炒蛋);或是介绍菜肴的主料和味道,例如\n“chickeninScallionoil”(葱油鸡)。 以烹制方法开头的译法主要介绍菜肴的烹饪方法和风味,例如“Stir-friedeelslices”(炒鳝片)、“braisedbeefwithbrownsauce”(红烧牛肉)。 以形状或口感开头的译法突出菜肴的口感和外形,例如“crispfriedspareribs”(香酥排骨)。 以人名或地名开头的译法重点介绍菜肴的创始人、发源地及主料,例如“MaPobeancurd”(麻婆豆腐)。 许多中国菜肴具有深厚的文化底蕴,对此,北京外国语大学英语学院陈德彰教授建议:“‘东坡肘子’‘桃园三结义’‘叫花鸡’等带有历史典故的菜名通常比较难译,翻译时不妨先音译或意译,说明该菜的具体用料等,然后再简要讲述一下菜肴的典故。这种方式不仅能引起用餐者的兴趣,也能兼顾文化和传播。”(详见50、52期八版“恍然大悟”) 尽管国内译者在翻译中国菜名上大费周章,各种翻译方法各有特点,但是在美国生活多年的曾女士表示,在国外唐人街的中餐馆中,菜单翻译都很“直白”。比如,“鱼香肉丝”便是“shreddedporkin\ngarlicsauce”(在大蒜酱汁里的肉丝),“咕咾肉”是“sweetandsourchicken/pork”(酸甜鸡、猪肉)。“这种直白的翻译在国外流传已久,早已深入人心。”曾说。 译名标准兼顾文化与实用 记者从市外办了解到,目前对英文菜名的审核、分类以及标准制定工作正在紧张进行中。北京市民讲外语活动顾问团专家、清华大学外语系程慕胜教授说:“翻译中国菜名,译者首先要对各道菜的原料、烹饪方法有所了解。这也是专家组所要攻克的首要难题。” 据了解,由于中国的烹饪艺术源远流长,各类菜式五花八门,数不胜数,且多具地方和传统特色,有些菜名的背后更是一段典故。因此,要将中国菜肴准确而艺术地译成英文是件难度颇高的工作。译者不仅要了解各种菜的原料、烹制方法、创始人或发源地等,还要熟知菜的色香味形和特色。此外,英文菜名还须简洁易懂,让用餐者一目了然。 “对中国菜单英文进行统一是一件非常有意义的事情,但难度也相当大。专家不仅要熟知中国的饮食文化,还须具备翻译专长。菜名翻译标准会兼顾文化和实用两大特点,有望在今年正式出台。”北京市民讲外语活动顾问团团长陈琳教授说。\n 常见中国菜名英译举例 (讨论稿) 鱼香肉丝:SautéedShreddedPorkinSpicy&ChilliSauce 四、半形象化的菜名 五、完全形象化的菜名 第一、第二和第三类菜名翻译起来并不十分困难,基本上都可以直译;第四类以意译为主,第五类一般不宜直译,最好采用汉语拼音加注的办法。 翻译菜单的主要原则是力求简明准确,能够说明菜肴的内容,能够使外国人明白就行了。在准确的前提下,尽量把菜名翻译得优美一些会更好。但是,难度很大。\n菜名相关知识——常用菜名的翻译一、以菜肴的主料和配料为主的菜名 1、饺子,中国特产,用汉语拼音,Jiaozi,加注dumplings,ravioli。近年来,由于中国与外界的联系日益扩大,出国的中国人,到中国来经商学习的外国人越来越多,作为中华文化载体的中餐必然会随之传播到世界各地。 2、蒸饺,中国特产,Steamedjiaoziorsteameddumplings,orravioli\n 3、馄饨,云吞,中国特产,用汉语拼音Hutun,yuntu,海外华人餐馆一直这样用,实际上已经被外国人了解。加注:Minijiaoziservedinsoup 4、元宵,中国特有,用汉语拼音,Yuanxiao,加注:Filledroundballsmadeofglutinousrice-flourforLanternFestival
